Kale and almond pesto: a healthy and simple recipe with dried tomatoes, raisins and parsley.
Tonight we are having a delicious kale pesto. It is vegan, healthy, tasty and it helps you sleep. If it wasn’t for pasta it would also be completely raw!

It must be my recent obsession for Laura Miller and her raw “life”… As much as I admire her and love everything she creates, I could never do it.
It’s like being a surgeon: I could never be one, but I’m glad someone else is, for the sake of humanity. And mine, in case… facciamo le corna, let’s make horns (with our fingers, it’s an Italian way to avert bad luck). The same applies to being vegan, not say be on a raw food regimen.
However, that doesn’t mean I exclude raw recipes, especially if they’re good and tasty! Like this one.
As you know, I’ve also been researching for foods that help you sleep, and I am cooking dinner accordingly (for the Moonlight Project :-)).
Magnesium seems to be the key. And a very rich in magnesium ingredient is kale. But almonds are in the top ten as well. Kale and almond pesto, therefore, appeared (and resulted) to be a great dinner recipe :-).
kale and almond pesto
- 2 big handfuls kale cleaned by removing stems
- 4-6 dried tomatoes filets
- 2 teaspoons raisins
- 1 handful peeled almonds
- 1 handful fresh parsley
- 1 teaspoon salt
- 3-4 tablespoons extra-virgin olive oil
Blend all the ingredients (leave olive oil for last).
Cook and season pasta (whole wheat is better).
