Stracciatella soup recipe

Ingredients

  • 1 cup broth
  • 1 egg
  • 2 tablespoons grated parmesan cheese
  • nutmeg
  • salt
  • the zest of half a lemon

Instructions

  1. Bring the broth to a boil.

  2. Beat the egg in a bowl, add the salt, parmesan, a few grinds of nutmeg, and lemon zest. Mix well.

  3. Pour the egg mixture into the boiling broth and whisk for 2 minutes.

  4. The soup is ready. Serve it hot!
