Earl grey mousse recipe

I made this earl grey mousse recipe to celebrate Labnoon’s birthday (see below), but as the guests at your party may be lactose intolerant, I made it with and without cream and milk.

The first egg white mousse recipe is made by infusing cow milk with two bags of earl grey tea.

The second mousse recipe, without cream, is made with coconut milk and/or rice milk, and coconut cream, that has a wonderful consistency, perfect for mousse recipes.

maybe I was inspired by downton abbey . Here’s an easy dessert recipe, white and elegant: earl grey tea mousse. almost forgot: it is also dairy free.

earl grey mousse recipe

A delicate and airy Earl Grey Mousse recipe.

Instructions

  1. Bring the milk to a boil, turn off the heat and infuse it with the tea bags for 5 minutes.
  2. Whip the cream to soft peaks. Add sugar and delicately mix.
  3. Beat the egg whites and the pinch of salt in the food processor until stiff.
  4. Mix together whipped cream and egg whites, stirring delicately with a rotatory/vertical movement.
  5. Add the milk, a tablespoon at the time, and stir delicately to incorporate it into the mousse.
  6. Place the final result in 2 individual cups or jars and refrigerate overnight.
  7. I decorated the earl grey tea mousse single cups with white chocolate star sprinkles!

  1. Bring the coconut & rice milk to a boil, turn off the heat and infuse it with the tea bags for 5 minutes. Add the coconut cream to the milk, mix and let chill, completely.
  2. Place the egg whites, the sugar and the pinch of salt in the mixer bowl and whisk until getting a firm, stiff meringue. Add the meringue to the tea cream, a tablespoon at the time, stirring delicately with a rotatory/vertical movement (use a soft whisk or a wood spoon). Make sure the meringue is completely amalgamated to the tea cream.
  3. Place the final result in 2 individual cups and refrigerate overnight.
  4. I decorated the earl grey tea mousse single cups with white chocolate star sprinkles and felt in love with them.
