where does the bellini come from

The Italian peach Bellini recipe was invented in 1948 by Giuseppe Cipriani, the same Harry’s Bar chief bartender that invented the Rossini cocktail.

He was inspired by a Giovanni Bellini’s painting and by the pinkish color of the toga of a saint portrayed. Yes, pinkish, cause initially, the Bellini included a bit of raspberry juice, that you can add, of course.

Ingredients

  • 2 parts peach purée if you can find them use white peaches, if not, use regular peaches - about a peach every two servings
  • 4 parts prosecco

Instructions

  1. Peel and slice the peach. 

  2. Blend it until creamy and pour it into a shaker or big glass. 

  3. Add the Prosecco, shake and serve.

Recipe Notes

Some filter the purée through a fine sieve, I don’t find it necessary.
