A prosciutto and figs appetizer for an Italian dinner party.

Actually, there is no recipe for the traditional prosciutto and figs appetizer: it is just the two ingredients served and savored together, on lazy Summer days, here in Italy.

In Rome, we add pizza bianca, white pizza: we put prosciutto and figs (sliced or simply cut in two) on top of a greasy and crispy slice, or open it in two and stuff it.

 

I do, anyway, have a recipe for you: “prosciutto e fichi” with prosciutto cotto, ham, chives, and parmesan flakes. It’s a gourmet Italian appetizer!

Ingredients

  • 1 fig
  • 1 slice ham or parma ham prosciutto cotto or crudo
  • 2-3 sprigs chives optional
  • Red salt
  • olive oil
  • parmesan or pecorino flakes optional

Instructions

  1. Finely chop chives.
  2. Roll the ham slice. Slice the fig in 4, open it and place the rolled ham in the middle.
  3. Season with chives (and cheese flakes), a few drops of olive oil and red salt to taste.
